GEOGRAPHICAL LOCATION
Our organic extra-virgin olive oil is born in Sicily, on the hills
facing the Iblei Mountains between the provinces of Ragusa and
Siracusa, and is obtained from a special blend of round iblea and
moresca cultivars, local varieties whose presence in the area
probably dates back to the Roman colonization.
The trees, most of which are secular, have a wooden trunk and a
roundish crown, make it impossible to rely on a mechanized process
for picking the olives and pruning the trees. Therefore, the only
solution is to pick the olives manually, a system which, on one
hand, increases operating costs, but, on the other, ensures the
excellent quality of the product, enhanced by such features as low
acidity and unique organoleptic characteristics. The altimetry of
the olive groves is: 350-400 MASL. The olive groves have an optimum
southward exposition, ensuring the slow and steady ripening of the
olives.
